HOW TO CARVE IBERIAN HAM

As we always say, eating the best Iberian ham is a real pleasure! However, in order to enjoy all its organoleptic properties, we would like to recommend you to be extremely careful when cutting a good ham. If you don't know how to do it, here are the best tips!

The process of cutting Iberian ham with a knife requires technique, time and dedication. It is very important to be precise, both in the thickness and the size of the slices in order to achieve the best texture and flavour.

 

KNIFE CUTTING

 

Before starting to slice, you need two fundamental elements: a ham holder and a specific knife, which will be of great help in obtaining the thin slices we are looking for.

Once we have our elements, we proceed to place our piece in the ham holder with the hoof facing upwards. This area is called the "maza" and is where the greatest amount of meat is found and this is where we will begin to slice.

First of all, it is very important to clean the ham and remove the yellow fat so that it does not contribute bitter flavours. To do this, we must locate the so-called "corvejón", a small protuberance that the ham has just after the hoof.

Once this part has been removed, begin to remove the first slice. Remember! The direction of the cut is from the hoof towards the tip and in the direction of the body. This way, it will be much easier to keep the cut straight.

It is normal to get short slices at the beginning, but as you go on, they will get bigger and bigger. Once you have reached the bone, use the ham knife or the ham knife to cut and separate the ham around it, this way it will be much more comfortable and easier to slice later.

Once you have finished cutting the maza, turn it over and proceed to cut the contramaza in the same way.
