Open the Iberian ham pack and leave to temper for 30 min if It was stored in the fridge. Separate the slices (as many as you want to use) and leave breathing for 10 minutes.
Pour a generous drizzle of Extra Virgin Olive Oil in a fry pan and fry the eggs. Place them carefully on a tray dish. with a pinch of Maldon salt over the yolk.
Open the Beans Jar and pour a very generous drizzle of the oil in a fry pan at medium heat, drain the rest of oil in a small bowl and set aside.
when the oil is getting hot, pour the beans and warm them up.
Pour the beans and the frying oil over the eggs as you can see in the picture, leaving the yolk uncovered.
Place the Iberico Ham slices over the beans and grate Manchego cheese on top.
Cut 2-3 thick slices of the sourdough bread, make soldiers and place on a plate aside.
