Next we will prepare, step by step, a delicious bluefin tuna tartar accompanied by mango and avocado, which will add flavour and texture to the recipe.
Tartar is a preparation of raw seasoned meat or fish. The most classic ones are steak tartar made with sirloin steak, red tuna or salmon. The most important factor for the success of the tuna tartar I am about to prepare lies in the quality of the product. In this recipe, the intense flavour of the tuna is perfectly complemented by the avocado and mango. The touch of wasabi adds the perfect touch to the dish.
Ingredients
-
300 g of tuna
1/2 spring onion
¼ red onion
3 tablespoons soy sauce
1 teaspoon wasabi
5 drops of sesame oil
1 avocado
1 mango
1 lime
1 pinch of pepper
Garnish to taste: edamame and wasabi caviar
Directions
Freeze fresh tuna of the best possible quality for at least 72 hours. Defrost in the fridge.
Cut the tuna into small cubes to taste and place in a bowl, which should be placed in a container with ice so that the tuna does not lose temperature.
Brunoise the spring onion and add it to the bowl with the wasabi, the tablespoons of soya, the drops of sesame oil and a pinch of pepper. Stir and set aside in the fridge.
Dice the avocado, season with salt and lime. With the help of a serving ring, place on the plate where the tartar will be served.
Add the chopped mango to the ring on top of the avocado.
Finally, place the tuna on top of the mango and carefully remove the ring. Add a few drops of lime over the tuna just before serving.
Garnish with steamed edamame and wasabi caviar.
Enjoy freshly prepared tuna tartar.
