Made by hand in Galicia, with "Galician blonde" cow's milk. Enzymatic coagulation and pressed and uncooked pasta. It has a pear shape and a soft, yellowish-orange rind. Creamy and slightly acidic flavor.
Wine pairing: Light and fresh wines, both white and red. Fino and manzanilla as well as sweet wines made with Moscatel and Malvasía.
