Russian caviar osietra is a fresh caviar obtained from the cross between the Russian sturgeon (Acipenser Gueldensteadtii),
It is a very valuable medium coarse-grained caviar, with an egg diameter of up to 3mm.
The color of the egg varies from pearl gray to dark gray, sometimes it can have golden tones. It is obtained through the traditional "Malossol" processing method.
