Flor de Esgueva old is a cheese made only with raw sheep's milk and matured in natural rind a minimum of 8 months. At different stages of maturation, our master cheese makers brush cheeses, give them a slight dip in oil, and turns around to hand one by one, until each piece reaches its optimum moment of healing. Thanks to these meticulous care and special climatic and grazing conditions Peñafiel, Flor de Esgueva has a unique flavor and testura. So for many it is the perfect aged cheese.
