Made in the Basque Country and Navarra using raw milk from the “Latxa” breed of sheep. Enzymatic coagulation, pressed paste, uncooked and with a long maturation. Smooth rind, amber in color and usually smoked. Strong and pronounced flavor with a very pleasant slightly spicy aroma. Buttery with hints of sheep and smoked. Firm texture.
Wine pairing: White wines aged in oak such as the wines of Navarra, Penedés, La Mancha, and Riojas. Crianza and reserve red wines from Ribera del Duero, Bierzo, Rioja, Navarra, La Mancha, Cariñena, and Priorato. Oxidative aging wines from Andalusia such as Jerez and Montilla-Moriles and Manzanillas past.
