Made in Menorca (Balearic Islands) with milk from "Menorquina" and "Frisona" cows. Enzymatic coagulation and pressed pasta, uncooked. It has a square shape. Bark yellowish-orange. This cheese has a characteristic flavor, spicy, dairy and moist, slightly acidic and salty.
Wine pairing: Light and fresh wines both white and red, (little aging), and fines and manzanillas from Andalusia as well as sweet wines made with Moscatel.
