Elaborated in Castille-León using cow, sheep and goat's milk. Enzymatic coagulation and pressed paste, not cooked. Its rind has grooves on the surface and the girth mark on the sides. It has a mild, lactic, aromatic and creamy flavour.
Wine pairings: Natural sweet white wines like Muscat from Andalucía and Alicante (best with some aging), Malvasia from Sitges and Canary Islands. Sweet red wines with character as Priorat, Monsant, Empordà.
