Elaborated in the district of Liébana (Cantabria) with "Pasiega"and "Frisona" cow milk. Mixed coagulation and soft paste wih a fresh lactic and slightly spicy flavour. Mouldy rind.
Wine pairings: Light and fresh red and white wines , finos and manzanillas from Andalucía and sweet wines as Moscatel, and Malvasía.

This cheese was very tasty. It was difficult to know what to do about the rind so I ate it with no ill effects.
