Tender pasta cheese, with a minimum cure of sixty days, with a layer of white mold. Soft and sour paste. Reddish color of the bark due to yeasts. Flavor more intense than white Tous, with lactic tones and mushroom aroma.
Wine pairing: Light and fresh wines, both white and red, without forgetting the Andalusian fines and manzanillas, as well as the sweet wines made with Moscatel and Malvasía.
