Made in the Valdeón (Leon) valley with pasteurized goat and cow milk. Rough and irregular bark of dark gray color. Closed interior with white texture and furrowed with galleries where the white and greenish blue mold grows. Strong, aromatic, fatty and buttery on the palate.
Wine pairing: Natural sweet wines such as muscats from Andalusia and Alicante, Malvasías from the Canary Islands and Sitges.
Red wines with character and tasty like Priorat, Monsant, Empordá. Pedro Ximénez wines from Andalusia, tasty and sweet from areas such as Malaga, Jerez and Montilla-Moriles.
