From Extremadura small Lambs, we remove the shanks and slow-cook them at 82c for 18 hours, the meat is so tender and full of flavour as it's cooked on its own juices.

Coming individually packed and frozen, just defrost and reheat in the oven for 20/25 minutes, try it with our Pedro Ximenez sacue.
