Bottarga is the lightly cured roe from the Grey Mullet, it is staggeringly popular in Italy on South Spain. Bottarga has an intensely nutty, salty taste, and a silky texture that it is best matched with neutral flavours.
You can eat it as any other smoked fish, finely sliced, or also used by many chefs as a seasoning, grating it over any dish to bring an umami punch.
