Sanlúcar Tiger Prawn (Penaeus kerathurus) is one of the most renowned gastronomic treasures of the Andalusian Atlantic coast. This species breeds mainly at the mouth of the Guadalquivir River. Between the provinces of Huelva and Cádiz, in the Doñana National Park.
It is a crustacean from the same family as the prawn and hence its appearance is very similar. Its unmistakable characteristic are the colors it presents on its body make it unmistakable: the whitish horizontal bands alternate with others of an almost reddish orange color. Its size normally ranges between 8-16 cm, although it can sometimes reach up to 25 cm in length.
But what really differentiates them from prawns from other fishing grounds, such as Tunisia or Morocco, is their nutrition.
