The beautiful rich, nutty flavour that Perigord are loved for is not lost in the freezing process, the only difference is in the texture., the frozen melanasporum is best suited to flavouring risotto, butter, oil or sauces. Dice very finely and use early in the cooking process to bring out the best of the earthy flavour.
You can use them directly from freezer, using a grater for example.
