The famous Basque beef steak cut is a tender and mellow piece with a quantity of superficial and infiltrated fat that makes it ideal for grilling. Served with the rib bone to maximize the flavor it provides in cooking. The dry-aged maturation makes all the flavor concentrate and the presence of fat is magnified, giving the piece an incomparable texture and taste.
The Frisona breed is the main one in dairy production. Its name comes from the region of origin, Friesland, located in northern Europe, although it is considered a Spanish breed integrated into Spain since it accounts for 40% of the total census.
