THE CHEESE MAP OF SPAIN
In Spain there are more than 150 types of cheeses produced both by large houses and by small families of artisan cheesemakers.
In the greenest area of the country, the Cantabrian coast, the cheeses produced are mainly from cow's milk. On the other hand, in the Basque Country and Navarra, natural means of the Lacha sheep, the cheeses are made from sheep's milk, while in the Catalan Pyrenees the most popular cheeses are goat's.
Going down the coast the main trend is that of goat cheeses. In the central zone, the use of milk of all kinds of sheep dominates, although in peripheral mountains it is goat milk that predominates.
In Extremadura and western Andalusia, sheep and goats are frequent, so the cheeses are mainly of these two types.
Finally on the islands, most of the cheeses are made with goat's milk, but we can also find productions with other milks. Today we review some of the most famous cheeses from each Spanish region, collected on a map by the Tasteatlas website.
